Recipe of the Month--Orange Ginger Snap Peas
2 lbs Sugar Snap Peas-clean, trim, blanch and pat dry
1 yellow pepper- long thin strips cut in half Dressing
3 Tablespoons Brown Sugar
3 Tablespoons Orange Marmalade
2 Tablespoons Juice of grated fresh ginger-squeeze out and discard the fibrous portion
½ teaspoon salt
Sprinkle of black pepper
Rind of ½ navel orange-use zester of fine grater to remove orange peel
Garnish
Orange slices cut in half around the bowl as needed
Definition of blanch: This term means to plunge foods into boiling water for a few seconds or a few minutes, then remove and place in ice water. This process sets the color of vegetables, lets you easily peel fruits, and slip the skins off nuts. The food does not cook all the way through, so crisp texture is preserved.
In this recipe blanch for approximately 1 minute, rinsing in cold tap water is sufficient.
Instructions:
Prepare vegetables. Clean, trim strings and ends off snap peas. Blanch, and pat dry.
Whisk together dressing. Store separately until almost time to serve. Can be prepared one day in advance. Keep refrigerated.
Before serving, toss vegetables with dressing. Garnish bowl with orange slices.
